Enticing Spiced Persimmon Holiday Smoothie

We chose to showcase lush, brightly colored persimmons, which reach peak ripeness in the autumn, in this enticing fall fruit smoothie. A hearty dash of nutmeg accentuates the honeyed taste and pudding-like texture of the persimmon, resulting in a holiday smoothie that recalls the taste of eggnog and other warming spiced beverages.

Nutmeg also adds valuable nutrients to this sweet, rich smoothie. The fragrant spice contains manganese and copper, good sources of an antioxidant called superoxide dismutase which helps lower oxidative stress inside cells.

To amp up the goodness even more, we included creamy, health-promoting banana, antioxidant-laden apple juice, and powerful inflammation-reducing MCT oil in our healthy holiday smoothie recipe.

Ingredients
  • 1 frozen banana

  • 1 persimmon, cut

  • 3/4 cup apple juice

  • 1/4 cup almond milk

  • 1 tablespoon MCT oil

  • Dash of nutmeg

Instructions
  1. Place 1 frozen banana in your blender or food processor.

  2. Slice and add 1 persimmon.

  3. Pour in 3/4 of a cup of apple juice.

  4. Pour in 1/4 cup of creamy almond milk.

  5. Finish with 1 tablespoon of MCT oil and a dash of nutmeg.

  6. Blend until thick and creamy, then enjoy!
