  • 1 tablespoon MCT oil

  1. Add to a blender or food processor 1 cup pineapple, frozen and cut into chunks.

  2. Add 1 cup watermelon, peeled and cubed with the seeds removed.

  3. Add 1/3 cup coconut water.

  4. Add fresh mint leaves to taste.

  5. Add 1 tablespoon MCT oil.

  6. Blend all ingredients until smooth and well combined. If mixture is too thick, you can add more coconut water.

  7. Pour contents into a tall glass.

  8. Drink immediately or refrigerate smoothie for up to 24 hours.
