Pasta with Zucchini and Cashew Cheese

Pasta With Zucchini And Cashew Cheese

Ingredients
  • 6 ounces pasta (your favorite type)

  • 4 medium zucchinis

  • 2 cloves of garlic

  • 2 tablespoons extra virgin olive oil

  • 2 tablespoons cashew cheese

  • Salt

  • Black pepper

Instructions
  1. Cut the zucchini in small pieces to reduce cooking time.

  2. Mince the garlic.

  3. Cook the garlic in a large pan with extra virgin olive oil for less than a minute.

  4. Add zucchini to the pan, sprinkle salt and pepper, and pour a half cup of water in the pan. Water prevents zucchini from sticking to the pan, and makes it softer. Cover with a lid and cook for around 15 minutes. Add more water if the zucchini absorbs it too quickly.

  5. Bring a large pot of water to a boil and add pasta (check cooking times).

  6. When the pasta is ready, drain it, and pour it in the pan with the zucchini. Simmer, add the cashew cheese and mix all until the sauce becomes creamy.
