  • 1 cup coconut milk

  • 2 teaspoons stevia

  • For topping: ghost marshmallow

  1. Add the frozen banana to the canister of your smoothie or food processor.

  2. Chop 1/2 cup jicama into cubes, then toss on top of the banana.

  3. Pour in 1 cup of coconut milk.

  4. Scoop in a 1/2 cup of pumpkin puree.

  5. Measure out 1 teaspoon of pumpkin spice blend and 2 teaspoons of stevia and add to the rest of the ingredients.

  6. Blend until smooth and creamy.

  7. To keep this as a vegan pumpkin pie smoothie, be sure to use a ghost marshmallow that doesn’t contain gelatin.
